Glyceryl Mono Stearate (GMS)

Glyceryl Stearate is the natural glyceryl ester from stearic acid (glycerin and stearic acid) which offers skin conditioning, moisturization and hydration due to the glycerin component. Functions as a non-ionic opacifier, thickener, and formulation stabilizer, where it also imparts a softer, smoother, feel to your emulsions.Glyceryl Stearate is one of the best choices, for thickening and stabilizing, to use in combination with the lactylates, where it also functions as an emollient, and gives the emulsion more smoothness.
Fatty acids containing high energy ( generating a lot of ATP ). Therefore the need for fat in food is required. Low-fat diets do to lower energy intake from food. Unsaturated fatty acids are considered better nutritional value because it is more reactive and is an antioxidant in the body.
The position of the double bonds also determines the reaction. The closer to the end, double bonds react more easily. Therefore, the fatty acid Omega - 3 and Omega - 6 ( essential fatty acids ) are more nutritional value than the other fatty acids. Some vegetable oils ( eg, α - linolenic acid ) and many marine fish oil contains essential fatty acids ( see various fatty acids ).
Because susceptible to hydrolysis and oxidation at room temperature, a fatty acid that is left too long will drop the nutritional value. Pickling can be done by saving them in a cool and dry temperature, and keep them from direct contact with air.
